
Farm And Sparrow Croissants
Farm and Sparrow is located near Asheville, North Carolina and operated by baker Dave Bauer. Dave specializes in rustic breads and pastries, rotating the menu seasonally. Dave style emphasizes heavy grains and high moisture dough which is then cooked until the crust is a dark brown and the crumb soft and moist. When available and practical, grains are sourced locally. Dave’s oven was built due to a relocation necessity- prior to to fall of 2009 Dave was baking in a five by seven hearth sized vaulted oven at another location.
Dave’s oven has unique door system using insulated doors that open out and up with pulley’s and counter-weights and then close using magnets. The veneer is made of some reclaimed bricks that were sourced locally, and features some custom tiles.
This oven installation was completed by Antoine Guerlain in the fall of 2009.
