Elmore Mtn. Bread

Blair Marvin and Andrew Heyn provided the inspiration and had the faith for our first large, freshly designed commercial oven project in several years. Guided by their vision for a wide oven opening, heavy mass, ample insulation, and door system the principles for the large commercial use six by nine foot hearth size oven were set in the design for their new oven, built in early summer of 2009. This oven replaced a five by seven foot hearth oven that was beginning to fall apart.
Elmore Mtn Bread bakes a broad range of artisan loaves from focaccia and pita to pain au levain. The breads are sold to restaurants, markets, CSA’s, and also at farmer’s markets.
Andrew and Blair have been incredibly supportive to our bake oven business and a major source of creative design ideas.

This oven was built by William Davenport, with help from Antoine Guerlain, Ksenia Chumakova, and Carsten Homstead.
